1 lb. hot or medium sausage
1 lb. sharp or medium cheddar cheese, grated
3 cups biscuit mix
few drops Louisiana Hot Sauce (optional)
Leave sausage and cheese out to reach room temperature. Put all ingredients into a bowl and mix well with hands. Roll into walnut sized balls. Place on a cookie sheet and bake 12-15 minutes at 350 degrees until golden brown.
May be frozen and reheated when ready to serve.
