DELRAY'S CHICKEN CORDON BLEU

3 large chicken breasts, skinned, boned, cut in half
6 slices deli ham
3 sliced mozzarella cheese, halved
1/3 cup Italian-style bread crumbs
2 Tbsp. snipped parsley
1 Tbsp. grated Parmesan cheese
1 tsp. dried sage, crushed
4 Tbsp. margarine, melted
1 can Cream of Chicken soup
1 (8 oz) sour cream

Cover both sides of a chicken breast with a piece of plastic wrap. Pound into a 5x5" piece. Remove plastic.
Combine bread crumbs, parsley, Parmesan cheese and set aside. Sprinkle each chicken breast with sage, add a ham slice, add a cheese slice and roll up - jelly roll style (you may need to put a toothpick in the roll to keep it together while cooking.) Next dip the chicken roll in melted butter, then in the bread crumbs, and put in a shallow baking pan. Bake at 350 degrees for 40-45 minutes (Serves 6)

SAUCE - Heat cream of chicken soup and sour cream. Pour over chicken before serving.
VEGETABLE SIDE DISH - Heat French-style green beans, cover with sauce and sprinkle with sliced almonds.
