1 box mac noodles (cooked and drained). Necia uses 16 oz., but you can use less if you like it 'saucier'
4 tbsp butter
4 tbsp flour
2 tsp salt
1 tsp dry mustard (not a necessary ingredient, but it helps bring out the cheese flavor)
1/2 tsp pepper
3 cups milk
3 cups cheese
Melt butter over medium heat, then add the flour and stir together to make a rue. Cook until it's a nice brown color but don't let it burn. Add milk, salt, mustard and pepper. Cook over medium-high heat, stirring constantly until thickened. Let mixture boil for about one minute. Turn off heat, add cheese and mix until melty and delicious. Put noodles in a 9X13 pan (careful, it will be very full!) Pour cheese mixture over the top and mix together. You can add more cheese to the top if you want crunchyness. Put in a 350 degree oven for 15 to 20 minutes or until it's warm. Serve and enjoy!
