So I swear you really have to try this one. It's great- even though it's just a mixture of ordinary things. Taylor's Grandma used to make this all the time and then the neighborhood kids would eat it when they were over visiting and they'd go home and tell their parents that they'd eaten spinach and none of the parents would believe them. So try it. Maybe your kids will eat spinach too!
1 lb. hamburger (I use ground turkey)
1 pkg. frozen chopped spinach
2 eggs
2 cans black beans (drained)
1 can diced tomatoes (with the juice)
sour cream and shredded cheddar cheese added to taste
Using a very large pan, start to brown the meat. When it's almost done, add the whole pkg. of frozen spinach (not thawed). Let it thaw in the pan as the meat browns. Break the eggs open into the spinach and meat. Mix up like you would a stir fry. Add in the beans and tomatoes. Let simmer for 5 minutes. Top with sour cream and cheese. It's that easy! And really good!
